so i went to BJ's with keith, thomas, charles, angeline, and jas after the superbowl party this past sunday. i guess we were feeling pretty gross after the hot wings, nachos, and desserts so we all got salads. i happened to order "the wedge" salad (which actually isn't all that healthy for you since it's just iceberg lettuce and ranch) and really enjoyed it (maybe cuz it was just iceberg lettuce and ranch). i dunno how they got their lettuce to be so crisp, but i decided to try it at home... after all.. it's just iceberg lettuce and ranch, right? :) So here's what I did for a dinner of french dip sandwiches, wedge salad, and roasted red potato "fries"
French Dip Sandwich
1 lb. NY steak or Rib Eye w/o bone, sliced 1/4 inch
1 packet Lawry's Au Jus Gravy Mix
4 French Rolls
4 Slices of Swiss Cheese
Horseradish and Mayo mixture
Grill steak for 2 minutes each side
Toast Rolls and smear a mixture of horseradish and mayo on each side to your liking
Follow Directions for Au Jus mix
Dip meat into au jus and
put swiss cheese between roll and steak as soon as possible to melt
serve with au jus for dipping
easy huh? and sooo good.. :)
Wedge Salad
1 head of iceberg lettuce
1 T. bacon bits or bacon fried till extra extra crisp
1/4 cup of red onions, chopped
1 T. parsley, chopped finely
(chopped tomatoes, optional)
Ranch Dressing
Keep lettuce in ice bath for 5 minutes, slice into quarters with a little bit of the base on each quarter to keep it together
sprinkle bacon, onions, parsley, and tomatoes onto the quarters
drizzle with ranch
Baked Potato Wedges
4 medium red potatoes, quartered
1 tsp. parsley
1 tsp. thyme
1 T. olive oil
1 tsp. lawry's seasoning salt
pepper to taste
shake all ingredients in a freezer bag
preheat oven to 400
microwave potatoes for 6-8 minutes (depending on your microwave)
place on a baking sheet and bake for 6-8 more minutes and broil until slightly golden (2 minutes?)

we had a lot of food... :)
